Denis Cronin and Caroline Burgess from Cronins Pub in Crosshaven called in for lunch today and were quickly made use of by being sent into the Demonstration Kitchen to talk to the students about what they do. Denis Cronin graduated from our 12 Week Certificate Course in September 2006 and immediately got involved again in the family business of Cronins Pub.
They had always served food and had a great lunch trade, but when Denis finished the course he decided to raise the bar and opened the Mad Fish Restaurant within the pub, serving fresh local fish from the harbour of Crosshaven. Eventually they decided to change the offerings of the main pub menu, removing sandwiches and concentrating instead on offering really good fish, mussels, oysters, a wonderful Seafood Chowder and the classic French Onion Soup.
Even though pub food is a core part of their business, they say it's important not to forget the pub side of the business, and so they only serve food until a certain time of the evening to ensure they don't crowd out their pub trade. They serve lunch 7 days a week.
