William Murray completed the 12 Week Certificate Course after first studying Fine Art in Limerick. Growing up in Currabinny, a small peninsula overlooking Cork Harbour, he was surrounded by home-grown food, vegetable gardens and mackerel fishing from the local pier — experiences that would later lend their name and inspiration to Currabinny.
William founded Currabinny with James Kavanagh, initially cooking and selling food at markets, events and pop-ups. What began as a shared obsession with food developed into a much wider project, with William bringing his training as both a cook and an artist to the recipes and distinctive identity of the brand.
In 2018, William and James published The Currabinny Cookbook, a collection celebrating generous home cooking and good Irish produce.
They later took Currabinny on the road with the Currabinny food truck, which first opened in Dublin in 2022. The truck has since found a new home at Shankill Castle in Paulstown, County Kilkenny.
For summer 2026, William is cooking from the Currabinny food truck in Shankill Castle’s historic stableyard, where visitors can stop for lunch, coffee and refreshments alongside a visit to the castle, gardens and farm shop. Produce grown organically on the estate is also used in the food at Shankill.
From growing up beside Cork Harbour to building Currabinny, writing a cookbook and now cooking at Shankill Castle, William has created a career that brings together food, art and a strong sense of place.
