Join our main student body in our demonstration kitchen for an afternoon demonstration. You will receive a copy of the recipes and a tasting plate at the end of the class. The demonstration room is equipped with a large overhead mirror and Monitors for closeup work. We release details of recipes to be demonstrated 2 weeks in advance.
Afternoon Cookery Classes begin at 2PM, however please try to be at cookery school for 1:45PM.
Guests will get a copy of all recipes and tastings of all dishes at the end of the demonstration. Please note you will be joining our main student body for this demonstration.

Join Iona Murray, Head Floral Designer at Ballymaloe House Hotel, for a full day of seasonal foraging, floral design and Christmas creativity at Ballymaloe Organic Farm.
Beginning with a walk through the 100-acre organic farm and gardens, Iona will introduce you to the abundance of natural materials available around us in winter. Together, you’ll learn how to forage thoughtfully and sustainably, discovering the beauty in branches, twigs, seed heads, foliage, berries and greens — materials that can be just as striking as summer flowers when brought into the home for the festive season.
Back in the workshop, Iona will demonstrate a range of seasonal arranging techniques and styles, including how to create a beautiful natural wreath. She’ll share her approach to working with foraged materials, with an emphasis on sustainability, affordability and making the most of what is already growing around us.
You’ll then have the opportunity to create your own festive arrangement using materials you have foraged yourself, guided by Iona throughout the process. Your finished piece will be yours to take home and enjoy throughout the Christmas season.
Along the way, Iona will share practical tips for helping arrangements last longer, preserving natural materials and getting the most from your creations — so that your Christmas decorating can be beautiful, resourceful and rooted in the natural world.

Good to Know: The course is held at Ballymaloe Cookery School & Organic Farm and Gardens in Shanagarry, Co. Cork P25 R274- a biodiverse working organic farm and greenhouses.
Light refreshments provided at the start of the course and a Ballymaloe Cookery School lunch provided midday.
The prestigious Ballymaloe 12 WeekCertificate Course is run three times a year, with courses beginning in January,April or May, and September.
The course is aimed at anyone with a passionate interest in food. Many of our students use the course as a springboard to become a professional chef; others use it to equip themselves with a marketable skill.
Others still take the course simply to maximize the pleasure they get from cooking at home.
Students develop a deep and detailed understanding of food and how it is produced. The emphasis is on recognising the best ingredients and knowing how to showcase them.
